So you like guacamole. Join the tribe. There are 10 million of us. And if you are a whiz in the kitchen, you probably have some type of go-to guac recipe that is “the best of all time”. Trust me, we all have this level of self-confidence and pride about our own sacred guac-recipe. And if I’m being honest, guacamole is one of the most important things in my life. More than once I have gotten into an argument touting my impressive guac portfolio, challenging ‘guac-off’s’ at inappropriate times that have gotten me dirty looks at family parties and work gatherings. That being said, I will not back down. Guac is amazing, and the avocado scare in California literally causes me to lose sleep everyday. Eat guac while you can, folks! And never take this avocado-filled life for granted.

All of the below recipes start with the basic guac recipe as a base, then add in the extras below. I hope this guacs your world.

The ‘Holy Moly’

Mango Guacamole 

This is my go-to party pleaser. Take a Memorial Day BBQ from zero to hero by adding two cubed mangos into your guac, when mangos are at the peak of their season. Use insider tips to cut a mango like a pro, and kick off the summer strong.

Roasted Poblano Guacamole

Nothing like a little roasted poblano pepper to heat things up and get the party started! Rub the outside of the pepper with oil and broil for 8-10 minutes, flipping until charred and delicious. Toss that sucker in the dip to add a zesty kick to keep everyone coming back for more.

Pomegranate Guacamole

You think guac is a summer recipe? Think again my friends! This is a perfect winter guac recipe, highlighting one of my favorite seasonal flavors. And if pitting a pomegranate terrifies you, (which is totally understandable), opt for a pre-pitted pom from the market to make life easier. You don’t need much – the equivalent of one pomegranate or 1 cup seeds should do the trick.

Grilled Pineapple Guacamole

Not to be outdone by its winter counterpart, pineapple guac is a total summer win! Lightly coat it in butter, honey and salt and toss this sucker on the grill before chopping up and tossing in your guac. Guaranteed crowd-pleaser at every backyard barbecue all summer long.

Crab Guacamole

Lump crab + guacamole. Need I say more? If this dish doesn’t say “coastal” then I don’t know what does.

Chipotle Pepper Guacamole

Holy SMOKES – smoky chipotle may just be what you are missing in your life! If the poblano pepper variation wasn’t for you, try a little chipotle to mix things up. Just don’t bite into the pepper whole unless you want an untimely early death.

Maple Bacon Guacamole

Two words: Brunch. Guac. 

These are a few of my favorite things. Add a little maple bacon to your guac to get your Sunday Funday off on the right foot. Top on breakfast burrito. Kill hangover. Drink bloody mary. Repeat.

Street Corn Guacamole 

Elote, anyone? Great for leftovers, used that grilled corn on the cob and toss it in your guac for a perfect afternoon pick-me-up with a tradition Mexican flare. Add some crumbled cotija for a fiesta in a bowl. Ole!
